Great northern beans offer outstanding health benefits, one among them is being loaded with antioxidants. They are a great source of fiber as well as protein and rank low on the glycemic index.

Storage

Like most stored foods, beans are best stored in the absence of oxygen and light. Ideally they are stored in cool, dry, dark locations and in air-tight containers. Beans have a minimum shelf life of 1 year but after 2-3 years will start to lose their nutritional value.

Cooking

Wash: In clean water, remove any foreign objects and then rinse.

Soak:

• • Regular Method: Cover beans with water (3 cups water : 1 cup beans) and set overnight.
  • Quick Method: Bring water and beans (3 cups water : 1 cup beans) to a boil for 2 minutes. Remove from heat and let stand 1 hour.

Cook: Add salt (1/4 teaspoon for each 1 cup beans) to beans and soaking water. Simmer for about 2 hours. Drain excess liquid.
