Quick & Easy Peanut Udon Stir Fry

This healthy and delicious plant-based peanut stir fry is a great weeknight dish for anyone short of time, but without compromising on flavour. Serves 2-4


For the Sauce

  • 1/2 cup of peanut butter
  • 2 tbsp tamari
  • 2 tbsp rice vinegar
  • 1 tsp chilli paste
  • 1 tbsp sugar
  • 3 cloves garlic – minced
  • 1 inch ginger – minced
  • 1/2 – 1 cup of reserved pasta water

For the Stir Fry

  • 2 tbsp sesame oil
  • 1 head broccoli
  • 1 carrot
  • 1 clove of garlic – minced
  • 1 inch ginger – minced
  • 1 jar udon noodles
  • green onion & cilantro to garnish


  1. Bring a large pot of salted water to the boil, and prepare your veggies. (Mince garlic and ginger, roughly chop broccoli, grate carrot and finely chop green onions). 
  2. In a small bowl, combine the ingredients for the peanut sauce and mix well. Set aside. 
  3. Loosen udon noodles and add to boiling water. Cook for 2-3 minutes. 
  4. Meanwhile, heat sesame oil in a wok or large frying pan over medium heat and sauté broccoli and carrots until soft. (7-10 minutes) 
  5. Drain udon noodles, reserving one cup of water for your sauce. 
  6. Add peanut sauce to noodles along with half to one cup of cooking water and stir through. (Add more or less water depending on how thick you like your sauce). 
  7. Mix in your veggies and toss well. 
  8. Divide among serving bowls, and top with cilantro and green onions. Enjoy!
